Beet Gazpacho

This velvety #chilled #soup is the perfect #summer accessory.


RECIPE

yield: 4 servings

INGREDIENTS

1 cup cooked beets, chopped

1/4 cup cilantro

1/4 cup red onion, chopped

1 Tablespoon jalapeno, chopped

1 medium Persian cucumber, chopped

2 cups tomato juice

juice of 1/2 a lime

pinch of salt


Combine all ingredients in a food processor until smooth. Chill in refrigerator before serving.

sliced avocado

dollop of Greek yogurt

fresh herbs like cilantro, dill, or parsley

toasted almonds
