1 teaspoon amaretto extract or liquor

1/4 cup self-rising flour

1/4 cup blueberries

1 tablespoon vanilla Greek yogurt, for topping (optional)

  1. Place milk, egg white, oil, amaretto extract, and allulose to a mug, stirring to combine. Add salt, flour, and blueberries, and mix well with a fork until smooth.

  2. Microwave 1.5-2 minutes until cake is set. Run a butter knife along the perimeter of the cake and invert onto a plate. Top with yogurt and more blueberries if desired.
