A mug, a microwave, and a little over a minute to satisfy that cake craving.
(yield: 1 serving)
1/4 cup milk of choice
1 egg white
2 tablespoons neutral oil
1 teaspoon amaretto extract or liquor
1 tablespoon allulose or other sweetener of choice (monk fruit, stevia leaf)
pinch of salt
1/4 cup self-rising flour
1/4 cup blueberries
1 tablespoon vanilla Greek yogurt, for topping (optional)
Place milk, egg white, oil, amaretto extract, and allulose to a mug, stirring to combine. Add salt, flour, and blueberries, and mix well with a fork until smooth.
Microwave 1.5-2 minutes until cake is set. Run a butter knife along the perimeter of the cake and invert onto a plate. Top with yogurt and more blueberries if desired.
