Buckwheat Brownie Bites

These no-bake, nutrient-dense bites are a simple solution for nourishment and indulgence - you decide.


Ingredients

1 1/2 cups buckwheat, cooked until tender

1 1/2 cups oats, uncooked

1/2 cup peanut butter, or any nut or seed butter of choice

1/4 cup honey

1/4 cup unsweetened cocoa powder

1/2 tsp vanilla extract

1/4 cup bittersweet chocolate chips

1 TBSP coconut oil


Directions

1. Combine all ingredients except for chocolate chips and coconut oil in a food processor until smooth. Roll teaspoonfuls of mixture into balls and place on parchment lined plate or tray.


2. Place chocolate chips and coconut oil into microwave-safe bowl and microwave, stirring every 15 seconds, until smooth. Using a small spoon, drizzle melted chocolate over prepared brownie bites. Refrigerate until ready to eat.
