Chilled Avocado Soup

If you love avocado, chances are you will never be tired of its usual formats. But in case you wanted to try something different for a change, here is a simple soup recipe. Yep, I said it - avocado soup.

RECIPE
yield: 3-4 servings
1 Tablespoon canola oil
2 cloves garlic, sliced
1 medium-large ripe avocado
juice of 1/2 lemon
14-oz can of vegetable broth
1/2 cup water
10 fresh mint leaves (plus more for garnish)
1/4 teaspoon ground coriander
1/4 teaspoon ground black pepper
hemp seeds (optional for garnish)
Place oil and garlic in a small pan and cook over medium-low heat until golden brown, about 3 minutes. Transfer garlic to a food processor or blender along with remaining ingredients. Process until smooth and silky. Transfer to a large bowl or container, and chill in refrigerator for at least 30 minutes, or until ready to serve.
