
Lemon Ginger Paste

A few weeks ago my mother handed me a jar of home-made lemony goo. Fully aware of the potent antioxidant and vitamin content of the goo's 3 ingredients (lemon, ginger, and honey), I had no reason to decline. So ever since, I've been using a bit here, a bit there, and quite frankly, a bit everywhere. I later named it all-purpose, lemony goo. Thanks mom.

Recipe
yield: about 1 cup
Ingredients
4 lemons, quartered (seeds removed as much as possible)
2-inch piece fresh ginger, peeled and roughly chopped
3/4 cup honey
Directions
Combine all ingredients together in a food processor until a paste forms. transfer to glass jar or container and keep refrigerated for up to 2 weeks.
*This blend is a good source of vitamin C, potassium, manganese, and vitamin B6. It also contains anti-inflammatory and antioxidant compounds, and may assist in relieving gastrointestinal distress such as nausea and upset stomach.
