No Added Sugar Chocolate PB & Blueberry Candy

I’m not one for diets, but I love a good challenge. So for the last 2 weeks I’ve excised all added sugar. That includes any sugar physically added by me to beverages or recipes, but also added sugars in staples such as yogurt, cereal, and bread. What I have still been consuming are natural sugars found in produce and complex carbohydrates such as whole grains. Because of friends like bitter chocolate and fruit, I’ve been happier than ever…and even eating an occasional home-made candy bar. Check out the recipe to my latest drool-worthy obsession below.

Recipe

(yield: about 12-15 pieces)


Ingredients

2 oz 100% cacao bitter chocolate

1/3 cup natural Peanut Butter (no sugar added)

1/2 cup fresh blueberries


Directions

  1. Break chocolate into small pieces and place into glass bowl. Microwave 20 seconds, and stir. Repeat 2-3 more times until chocolate is completely melted and smooth.

  2. Spoon small dollops of melted chocolate on a parchment lined cookie sheet and flatten into 2 inch discs with the back of a spoon.

  3. Dollop 1 tsp of peanut butter onto each disc. top with 3 blueberries, and finish with more chocolate. Freeze for at least 30 minutes. Transfer to ziploc bag and enjoy whenever!
