Oven Baked Sweet Potato Fries
I must admit, my favorite thing about oven sweet potato fries is their simplicity.
For all of you minimalists and/or just hungry, tired folks out there who just want a simple home-cooked meal - how about something with a handful of ingredients and with the most complicated step being firing up an oven? Bring it on? I agree.

If your down for perfect sweet potato fries each time, there are just 3 things to remember...
1. Make sure your fries are uniform in size and that each tater has its space on the sheet pan, no overcrowding please. This way the fries will all be perfectly cooked, and perfectly crunchy.
2. Take the time to flip the fries halfway through the cooking process. Otherwise, one side will be too soft and the other...well, burned.
3. Consume promptly. The truth is, sweet potato fries with not retain their perfect texture forever. Although they will continue to be delicious, their oven-crisp on the outside, soft on the inside texture will likely go away. So eat em' while they're perfect ;)

Recipe
(yield: 4-6 servings)
4 medium sweet potatoes
2 TBSP canola oil
2 teaspoons Italian Seasoning
1 teaspoon garlic powder
1/4 teaspoon each salt & ground pepper
Preheat oven to 400 degrees Fahrenheit. Line a large sheet pan with parchement paper.
Cut each potato length-wise into thirds. Then cut each third into 3-4 long matchsticks, each about 1-inch thick. Toss potatoes with remaining ingredients in a large bowl to coat evenly.
Bake 15 minutes. Using tongs, flip each fry, and bake additional 15 minutes.
