Roasted Carrot Harissa Hummus

Try this delicious spin on classic hummus by throwing roasted carrots and spicy harissa into the mix. In case the vibrant hues and sweet flavor aren't enough, how about some beta-carotene for immune support, healthy skin, and sharp vision?

Recipe
yield: about 1 1/2 cups
Ingredients
3 medium carrots, peeled and cut into 4 inch pieces
2 cloves garlic
2 Tbsp avocado oil
1/4 teaspoon ground coriander
1/4 teaspoon ground cumin
1/2 teaspoon Harissa*
1/2 teaspoon salt
2 Tbsp tahini
2 Tbsp plain Greek yogurt
1 Tbsp lemon juice
Directions
1. Preheat oven to 400 degrees Fahrenheit.
2. In a medium bowl, toss carrots with garlic, 1 Tbsp oil, coriander, and cumin. Spread seasoned carrots onto a sheet pan and roast in the oven until carrots are tender, 25-30 minutes.
3. Once cool enough to handle, combine carrots with remaining ingredients in a food processor until completely smooth. May add a small amount of water to adjust consistency.
*Harissa is a smoky, spicy blend of chilis, herbs, and spices. It is usually in the form of a paste, but may also be found as a dry seasoning.
