Sweet Pea Hummus

I swear I don't make everything in a food processor. But this one was just too good & easy to not share.


RECIPE

yield: about 1 cup


INGREDIENTS

1 1/2 cups frozen sweet peas, thawed

1 Tablespoon Tahini

1 Tablespoon plain Greek yogurt

1 Tablespoon parsley

1 clove garlic

2 Tablespoons lemon juice

1 Tablespoon Nutritional Yeast*

1/2 teaspoon salt

1/4 teaspoon ground black pepper


Combine all ingredients in a food processor until smooth.


Serve with:

  • whole grain crackers

  • pretzels

  • hard-boiled eggs

  • fresh radishes, cucumbers, or other veg.


*Nutritional Yeast, not to be confused with baker's yeast, is a versatile ingredient offering a good deal of nutrition in a small package. Among the nutrients found in nutritional yeast are fiber, protein, and vitamin B12. Its nutty, cheesy, umami flavor makes it a healthy vegan alternative to cheese and a nutritious flavor enhancer to almost any savory dish.
