Whole Wheat Pizza Dough


Recipe

(yield: 2 medium pies)

1/4 ounce packet active dry yeast

1 1/2 cups warm water

1 teaspoon sugar

3 1/2 cups white whole wheat flour

1 1/2 teaspoons salt


Stir together yeast, water, and sugar in a medium bowl. Let mixture stand for 10-12 minutes until frothy.


Combine 3 cups flour and salt in a large bowl. Make a well in the center and pour in yeast mixture. Stir flour toward center until a dough forms. Transfer to a floured surface, and knead 7 minutes, incorporating remaining flour as needed. Dough should feel slightly sticky and elastic. Transfer to a clean, oiled bowl, and cover with plastic wrap. Let rise in a warm area of the kitchen for 1 1/2 hours. Punch dough down and divide in half. Use immediately or wrap tightly and freeze for later use.
