Zucchini Latkes

This has got to be one of my favorite holiday recipes to make, and eat! A few healthy swaps (zucchini, zucchini, zucchini) make these finger lickin' latkes more than just delicious.


Recipe

(yield: 14 latkes)


1 large zucchini, grated (skin on)

1 small yellow onion, grated

1 egg

1/2 cup whole wheat flour

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 TBSP olive oil


Combine all ingredients together in a large bowl. Heat oil in a large skillet over medium-high heat. Spoon heaping soup spoonfuls of the mixture into pan. Cook 5 minutes until brown and crisp, and flip, cooking an additional 3 minutes on other side. Eat immediately!


*Serve with plain Greek Yogurt or apple sauce.
